How To Make 3 Ingredient Pumpkin Pancakes

I feel strongly about the responsibility to feed my child proper nutrients. As we introduce more and more foods, I'm understanding how easy it could be to want to give your baby more and more foods and forget the purpose of the foods. I, myself, have been wanting to try new and different recipes. 

I came across this recipe and tweaked it a bit to my liking. 

I have to say, Ellie seemed to like it more than some of the other foods I've given her so far. 

Ingredients needed: 

-half a banana

-1/4 cup pumpkin puree

-1/4 cup prunes

**Note the original recipe called for eggs instead of prunes but we were out of eggs so I used the prunes as a subsititute, it ended up being okay, but I think if I would've had eggs and been able to use them it would have been something she could have eaten on her own instead of me feeding her. 


Heat pan with oil (I used coconut, extra virgin olive oil would work as well) 

Mix ingredients in bowl and be sure they are mashed well. You could blend or put them in a food processor as well. 

spoon mix in pan and heat until it has a "cooked" look. 

Let cool, serve.
